1 ½ Pounds of Cauliflower, Raw
2 Tablespoons of Butter
2 Tablespoons of Sour Cream
2 Tablespoons of Parmesan Shake Cheese
¾ teaspoon Garlic Powder
Salt and Pepper, To Taste
One serving of keto cauliflower mash only has 6.3 net carbs. However, from a balanced macro standpoint, it does weigh a little heavy towards carbs. Therefore, you’ll want to make sure you fat bomb or pair it with a high-fat main dish.
Step 1: Cut cauliflower into two-inch pieces.
Step 2: Place cauliflower in a dutch oven and fill with water until the cauliflower is covered with an inch of water.
Step 3: Bring the water to a boil and cook the cauliflower for ten minutes.
Step 4: Drain the cauliflower well and then add it back to the dutch oven.
Step 5: With the heat off, add the remaining ingredients.
Step 6: Use an immersion blender to blend well. Note: a blender or food processor could be used if you don’t have an immersion blender. However, I’ve had the best results using the immersion blender.

The great thing about this recipe for keto cauliflower mash is that it freezes very well. Depending on how you store the mash, it may stay good for up to six months. I freeze the cauliflower mash in individual serving size Tupperware dishes and seal a-meal it, removing all air.
Keto cauliflower mash will also stay good in the refrigerator for up to five days. Pop in the microwave to reheat, or gently reheat on low on your stovetop.
