Keto pad prik king is easy to make and will give you the taste of thai you’ve been missing. It comes together in under twenty minutes and only has 8.1 net carbs.



1 pound of boneless skinless chicken breast

3 tablespoons vegetable oil, divided

3 tablespoons red curry paste

¼ cup chicken stock, unsalted

1 teaspoon brown sugar swerve

1 tablespoon fish sauce

1 tablespoon lime juice

1 ½ cup of green beans, cut into ½ inch chunks


  1. Gather all ingredients and prep the chicken and green beans.
  2. Make a slurry with the chicken stock. Measure out and add brown swerve, fish sauce, and lime juice to the measuring cup containing the chicken stock. Whisk to mix.
  3. Put two tablespoons of oil in a pan.
  4. Add chicken, and cook for 4-5 minutes until golden brown. Frequently mixing.
  5. Remove chicken from pan and set aside.
  6. Add one tablespoon of oil, give it a few seconds to heat up, and then add the curry paste.
  7. Pour chicken stock slurry mixture into pan.
  8. Add greens, let them cook for about a minute.
  9.  Add chicken. Reduce heat to medium and cook for 5 minutes.


1)      The green beans will be tender-crisp. If you like softer green beans, let them in the pan for two minutes longer.

2)      It is important to use unsalted chicken stock in this recipe.  Otherwise, the result will be too salty. The fish sauce acts as salt in this recipe and imparts a lot of flavor.

3)      The overall result of this recipe will be impacted by the red curry paste you use.
